What about digital tips or one-off payments instead?

For example: imagine being able to unlock a single Substack article for $1. Or a model where the author charges $0.10 for a preview and $1 for the full post, but once the post has earned $100 total it becomes free for everyone.

That way readers only pay for what they actually want, and early supporters effectively help unlock the content for the wider audience.

AI subscriptions don't fit neatly into either of your two categories though. Claude Pro is $20/mo but the equivalent API value for a moderate user works out to something like $250. That's not really a subscription; it's a loss leader dressed up as one.
